FRANK'S FAVORITE OYSTER DRESSING

Ingredients

2 cups chopped celery

1 large chopped onion

7 slices dried bread - cut into cubes

1 tablespoon chopped parsley

2 pints or 1 quart oysters - reserve liquor

salt, pepper, poultry seasoning to taste

3 beaten eggs

3 cups milk combined with liquor from oysters

1 lb butter

Place butter and olive oil in pan over medium heat. Saute celery and onions until opaque. Remove from heat.

In large mixing bowl combine dried bread cubes, parsley and seasonings. In separate bowl beat eggs and combine with milk-liquor mixture. Add the milk mixture then, the sauted vegetables to the bread and mix thoroughly into moisten. Add oysters last and mix. Pour into a greased baking dish and bake at 350 degrees F for 20-25 minutes.

For a southern flair, replace part of the bread with cornbread or saltine crackers!
